Our Artisan Roasts

All of our coffees are excellent in any preparation including Espresso.  Each special coffee is unique.   Our roast master works to find the perfect roast level to preserve and highlight the natural qualities of each Origin and present each bean at its most delicious, so not all coffees are presented in all roasts.

LIGHT Roast    

Our signature roast.  A light, most flavorful roast characterized by light to medium smooth body, a high clean acidity and bright sweet flavor.  The bean will be dry and brown with no surface oils. 

FULL CITY Roast    

Our Medium/Full City produces a medium brown bean that may be dry or have faint patches of oil on the surface.  Rich and flavorful, with bright flavor, smooth body and a full round golden caramel sweetness.

VIENNESE Roast    

A medium dark roast with the richness of French Roast without the carbon-smoky flavor.  The bean will be dark reddish brown and only slightly oily.

FRENCH Roast    

Our darkest roast is carmellized, not carbonized.  These beans have a very bold and rich, caramel-smoky flavor and syrupy body.  The bean will be dark brown and oily.

Ethiopia is the homeland of all Arabica coffee.  Lekempti, also known as Nek'empte, is a region located within the state of Welga, about 6 hours west by car from Addis Ababa. A small group of coffee farmers from this region are members of the Oromia Coffee Farmers Cooperative Union (OCFCU), founded in 1999. OCFCU is a union of 24 small cooperatives benefiting 22,700 small holder farmer members.

This very special lot received the highest score in this year’s prestigious Ethiopia Limited Coffee Auction for its amazing clarity and sweetness. The coffee is dried to 11.5% moisture on raised drying beds made of local materials and cement. There are 400 family farmers in the Cooperative that grows and processes this coffee, with an average farm size of 750 hectares. The soil is volcanic with high nutrient holding capacity for organic minerals.

World class coffee from the birthplace of all Arabica Coffees: Yirgacheffe region in southern Ethiopia. The ripe cherries are handpicked from an area of about 900 hectares at an altitude of 5700 feet above sea level. The organic farming union that produced this lot consists of about 490 family farmers.

Oromia Farmers Cooperative Union is a famed and highly respected for growing and processing the world's finest and most consistently excellent eco-friendly, farmer-friendly Yirgacheffe coffees, and as an exemplary Fair Trade Union.  Our lots are the best of the OCFCU crop. A large group of Oromia coffee growers (whose ancestors discovered Arabica coffee!) from Yirgacheffe are members of the Oromia Coffee Farmers Cooperative Union (OCFCU), founded in 1999. OCFCU is a union of 24 smaller cooperatives benefiting 22,700 small holder farmer families.  The OCFCU is featured in the award winning documentary BLACK GOLD.

 Mbeya region is home to some of the finest heirloom Arabica cultivars of East Africa but many of the farmers lacked the water or processing equipment to bring out the best in their coffee. Not anymore.  To support the farmers, the Hope Project has set up 23 ecologically appropriate coffee washing and drying stations (pulperies) in the Ileje, Rungwe, Mbeya Rural and Mbozi districts of Mbeya Region, Tanzania. The Hope Project also benefits and assists several health and HIV clinics in the region. Our delicious Pea Berry lots are hand sorted and of the highest quality, and prove the enormous potential of this previously underecognized coffee region.

CENAPROC Cooperative, led by the energetic Pedro Patana, has emerged as a superstar of Bolivian coffee and just keeps getting better every year. Comprising 85 Indigenous families, CENAPROC’s farms cover 760 hectares of Andes mountain cloud forest slopes with natural shade ranging in altitude from 4000 to 6000 ft. Each family has an average of 9-10 hectares. The Cenaproc Fair Trade Cooperative is a rare drug war success story, since the coffee is grown on land previously used for coca leaf production. They have won the Bolivian Cup of Excellence competition twice, and have been runners-up in the other years.  From their drying station a few hours from Caranavi, they are producing glorious, sustainable 100% organic coffees of incredible quality and intensity.

The Cup:  Exceptionally clean, smooth, low-acid coffee which is remarkably full-bodied and flavored.   It has a strong coffee flavor and French Grenache character emphasizing mellow bass notes. Brewed, it begins with floral notes of roses while hot, gradually revealing nutty flavors of walnut and pecan with a trace of cocoa as the cup cools. As an espresso, it has a floral almond aroma. Honey textured, extra-sweet and lively, -full of elegant fruit, chocolate, nuts and refined butter-marzipan with just a hint of vanilla. Elegant, smooth, of one piece from first to finish.

Cutting Edge Daterra Farm is located in the sub-tropical regions of the biologically critical Cerrado, in the state of Minas Gerais, and of the Mogiana, in the state of Sao Paulo. Daterra has divided its land into 88 minifarms demarcated by coffee variety. Their philosophy goes beyond quality, research and a great espresso; it embodies a sustainable coffee program that preserves the Eco-Social System around its plantations. Daterra's passion for the environment has turned this coffee farm into a garden, surrounded with native trees, wildlife and human development.  Our Organic Pulped Natural Reserve lot is the result of more than 5 years of research and organic development by Daterra.   Coffee trees selected for the Special Organic Reserve are given unique treatment throughout the growing year, inducing their roots to tap deeper into the soil in search of the combination of nutrients unique to the Brazilian Cerrado. The Arabica cultivars are Catuai and Mondo Novo, chosen for exceptional smoothness, our lot is of very low yield and hand-harvested, selecting only ripe cherries.

Founded in 1895, Family owned and operated Fazenda Sertãozinho’s coffees have been served at the Vatican and have been a consistent finalist in Cup of Excellence, Aldir Alves Teixeira and Illy Coffee Quality competitions. This very special farm was converted to and certified organic in 2000 as a demonstration of the third generation owner, the innovative Dr. Alberto Barretto’s personal commitment to environmental preservation and Biodynamic practices. The farm currently produces a single, very limited crop of consistently first class organic coffee that ranks among our all time personal favorites.

Founded in 1872, Café Mesa de los Santos is a pioneer sustainable coffee company and is among the most respected growers and exporters of organic Specialty coffees in South America. 100 Years ago, Mesa was the first organic grower in Colombia to produce and export specialty organic coffee and was the first farm in Colombia to be Certified Organic by BioLatina.  Still following the tradition of four generations of shade coffee growers on the farm, Cafe Organico Mesa de los Santos is grown 100% ecologically, protecting nature and the workers, with no chemicals, using natural fertilizers and spring water, and under shade on high altitude.

Founded in 1899 by the Keller Family, Finca Santa Isabel has been family owned and operated for four generations. Located at altitudes ranging from 3,500 to 5,000 feet, the farm produces Strictly Hard Bean and Hard Bean coffees. Our SHB Cup of Excellence lots come from the highest area of the property adjacent to a protected nature reserve, where there are many diverse plant and animal species. Coffee quality, biodiversity and sustainability are key components in the production of Santa Isabel coffee and the preservation of their nature reserve. Each coffee cherry at Santa Isabel is carefully selected; hand sorted, and processed on the premises-producing a consistent and high quality crop of fine Guatemalan coffee.

The Spanish word Terruño means "my land” or "homestead."  Terruño Nayarit coffees come from heirloom trees on the homesteads of the 260 small holder coffee farmers working together with legendary Q cupper and processing innovator Jim Koslos in Nayarit, Mexico. Nearly all of these cooperative growers are clustered around an extinct volcano, Cerro San Juan, located immediately to the west of Tepic, the capital of Nayarit, which imparts its special characteristics of soil type and microclimate to the bright, floral and citrusy coffee. This North American beauty is arguably the finest coffee from Mexico at this time.

Since the late 1800's, three generations of the Ruiz family have been dedicated to the traditional coffee varieties and natural-system growing methods characteristic of excellent coffee flavor and nature preservation in the famous Boquete region of Northern Panama.

On the slopes of the Andes, Cooperative La Florida was established in 1966 with 50 members; today the Union has grown to 1200 indigenous farmer members and 183 certified organic producer groups. In addition to preserving the fragile Andean cloud forest eco system, La Florida works to improve the community in many ways. They support local schools by providing pencils, erasers, notebooks and other items. The Cooperative also owns their own tractor and a truck, allowing them to maintain the roads, making sure they are in good condition, making it easier for members to transport coffee with access from their community into town. Credi La Florida was established in 2002 and more than 1300 producers use this micro-credit program. Our superlative, Strictly High Grown La Florida lots grow at altitudes between 4,800 and 6,000 ft.

Balmaadi Estate is situated in the Blue Mountains of Southern India, in the Nilgiris District of the state of Tamil Nadu. It is part of the O'Valley group of plantations that were developed over 150 years ago by an enterprising Scotsman, John Ouchterloney. These plantations are home and employer to the mysterious Toda tribes. The Estate produces one of the highest grown coffees in India, nurtured by native shade trees, called Sholas. The farm plants according to bio-dynamics, learned from Rudolf Steiner of Germany. This agriculture method depends not only on the quality of the soil, but also the cosmos-movements of the sun, moon and planets. To maximize the effect of their inputs, the producer follows a bio-dynamic calendar for planting, harvesting and applying natural fertilizers. The Estate is surrounded by a forest in which sambhar, bison, deer, elephants, panther and monkeys roam freely. Every year, Balmaadi plants more shade cover and adds many new varieties of trees, increasing biodiversity and sustainability. The coffee has won the Flavour of India, Fine Cup Award for India's best Arabica coffee.

The Cup:  Sweet, deep bass notes with Guinness tones and bright fruit in a very low acid cup.  Dark chocolate and even some floral nuance give way to a nice spice on the silky smooth finish. Full bodied, malty and sultry.  Presented in a Viennese Roast.

 

Taman Dadar means flower garden. This rare organic Java coffee comes from the small holder cooperative farmers in the villages of Curah Tatal and Kayumas on the Ijen Plateau and represents the only Certified Organic coffee grown on Java. The vast majority of Java coffee is grown on government estates, Taman Dadar union is a welcome exception that reveals the extraordinary potential held in the Java Terroir.

The Cup:  Simply Superb.   Rich, creamy, big bodied & smooth, with a mild yet shimmering acidity.  Elegant and balanced, there is a hint of flowers and cashew butter with a deep, dry, plum-wine fruitiness and mellow, spicy finish.  Presented in a Full City Roast.

Coffee was cultivated on Sulawesi well before the Colonial period and the organic tradition of cultivation goes back hundreds of years here. The most famous part of the coffee area in Sulawesi (formerly Celebes) is Toraja, which is in the center of the coffee production area and in the highest parts of the Sesean Mountains. The Torajan people indigenous are descendants of Indochinese oceanic traders who crossed the sea to settle in the Sulawesi highlands and take up agriculture. They are a very independent ethnic group which has managed to maintain their true original cultural identity reflected in their language, social manners and religion (called ‘Aluk To Dolo’; The way of the Ancestors). They build their houses, called Tongkonan, in the shape of their ancestors’ original boats. Great craftsmanship and eye for detail is something Torajans are known for and these skills which are reflected in the dedicated way they cultivate their coffee crop. Toraja coffee is known for its high body, low acidity, spice, sweetness and very mellow aftertaste. It is grown at altitudes of 1400 to 1900 meters. The newly established Cooperative Union, ‘Petani Kopi Organik Toraja’, consists of 780 farmers (small-holders) with organic farms, locally known as ‘gardens’, with an average size of about 1 to 1.5 hectares each. Now and in the past this coffee is and was organically grown and is now certified Organic. The Cooperative has been awarded Fair Trade and Rainforest Alliance Certifications. The goal of ‘Petani Kopi Organik Toraja’ is to produce the best quality organic coffee possible and to improve the livelihood of all farmers and their families, socially and economically. The symbol for the sun, or Bariallo in the Torajan language, represents good health, luck and prosperity. To ensure all three for them and their families, the marking on their jute bags is the Bariallo.

 

Papua New Guinea  Ilesa

The Cup:  Very rich and chocolaty, filled with apricots, nuts and berries– a sweet, clean cup with piquant acidity and a creamy body & bold, vibrant aroma.  Presented in a Viennese Roast.

 

Papua New Guinea is an island of spectacular scenery and rich culture. The abundant rainfall and rich volcanic soil provide ideal growing conditions for Shade Grown coffee. Organic Certification of coffee was introduced into Papua New Guinea in 1991. Coffee is the only cash crop for these growers and the growth of organic coffee will result in better benefits and a brighter future for these families. There are 2600 family farmers in the Purosa Cooperative, who live in the 32 villages spread over 500 square kilometers of the valley. Highlands Organic Agriculture Cooperative Ltd (HOAC) is made up of 12000 families who tend their small coffee plots and process beans at their village mill. As demand for their exquisite coffee grows, it is expected that over 5000 more growers will join in the next few years.
